Update README.md

Sex and Gender is a sticky topic these days.

I was informed in a couple emails that LGBTQ might be more offended by being included using the deprecated method, than they would have been by being left out entirely.

So... new method!

Instead of using a Geek Code category here, pronouns become the category! Deprecated method left in the code for backwards compatibility. This simplified the example block considerably!!
